PERU - CHIRINOS COOPERATIVE
The Chirinos Cooperative is located in the region of San Ignacio, Cajamarca. This was the first coffee region in Peru that we visited back in 2010. This region is known as the mecca of organic and fair trade coffee in the country. Located in the northern part of Peru, it is quite an adventure to reach San Ignacio, often taking some 12 hours to get there through a combination of flights and bus travel. You do experience some of the most breathtaking landscapes of the country though!
Cupping Notes:
Fully-washed, sun-dried. Blackberry & tart cherry aromas, nutty, chocolate & dark fruit sweetness. / Light Roast.
The cooperative we source this coffee from is called La Prosperidad Chrinos Cooperative. The co-op has some 600 members, and all of them are involved in coffee production education and sustainability initiatives.
Women and youth are involved in all the process from farm to quality control including cupping. They maintain a model of 'learning gardens', through which the members can learn from best practices in long term coffee farm management. This is a Fair Trade and Organic coffee.
